Hot Cayenne Powder comes from the dried, ground pods of a variety of Capsicum Annuum. Cayenne is in use the world over and is one of the most widely grown chillies on the planet. “Regular” Cayenne S4 comes in around 20,000 to 30,000 on the Scoville heat chart, whereas Hot Cayenne Powder hits 50,00 to 70,000. You’ll still get the great flavour of the chilli coming through, but with more heat!
With this variety of chilli growing everywhere, it is difficult to keep track of types and heat levels. In Europe, a standardised system was developed to differentiate between them; the S-Cayenne. S4 is normal Cayenne heat, whereas this is S17, much hotter and what you might find in a vindaloo curry. If this sounds too hot. we also have the lower heat Cayenne Pepper, De Arbol Chilli Powder and Flakes, as well as “normal” Chilli Powder and Kashmiri Mirch Chilli Powder, if you want something with less kick.
The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
