Aji Amarillo Yellow Chilli Paste is a staple of Peruvian cuisine, adding colour and flavour to dishes. Like many important components of global dishes, they would usually make it fresh as and when they need it. This is quite often not possible when access to the chilli peppers you need is difficult at best! The next best thing is this paste which is easy to use and delicious. Aji Amarillo Yellow Chilli Paste is a key ingredient for Aji de Gallina, a creamy chicken dish with plenty of flavour and a chilli kick. You can make up a custom salad dressing by adding it to other ingredients, or use it as the base for a marinade. As a sauce making ingredient, this also works wonderfully! Stir some into some mayonnaise along with your choice of South American spices for a spicy, creamy sauce. Add some to soups and stews to instantly add flavour and heat if that’s what you’re going for. It pairs very well with seafood either as sauce or a marinade. Definitely another great ingredient to experiment with in your culinary creations!
