Horseradish Powder is the dry, ground root of the Armoracia Rusticana plant, which is in the Brassicacae family. Like others in that family such as Mustard and Wasabi, Horseradish Powder has a spiciness that registers more in the nose and sinuses. It is now very easy to get the hot, peppery flavours into your cooking using this finely ground product.Horseradish is of course a perfect accompaniment to roast beef but you can also use it to add extra zing to other foods too. Stir into sauces, soups, stews and casseroles as it is, or mix it up to make horseradish sauce to put on the table.

Horseradish has been around in kitchens for millennia. It was written about by historical figures such as Pliny the Elder and Dioscorides, and there is a mural in Pompeii that shows the plant. In the Middle Ages, both root and leaves were used as a medicine and Native Americans used it to stop scurvy and as a treatment for the common cold. We can certainly see the thinking behind it as a cold remedy, as it can be a blast for the sinuses!

As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
