Pickling Spice Mix is a combination of herbs and spices that will impart lots of flavour to any food. It is a blend of Coriander, Brown Mustard Seeds, Yellow Mustard Seeds, Cloves, Crushed Chillies, Black Peppercorns, Dill, Juniper Berries, Allspice and Ginger. These all combine to give anything you pickle an amazing flavour, be it onions, gherkins, eggs or chilli peppers.
Pickling has long been a great way of preserving food, as you can enhance the flavour more than when drying and salting. Using plain vinegar, however, can leave an acrid, one dimensional taste to your foods, so adding Pickling Spices will greatly boost flavours. What’s even better is, you don’t really have to prepare anything – just open the pack and add as much Pickling Spice Mix you want.
The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
