XO Sauce is a Weymouth 51 version of an ever popular sauce from Hong Kong. This is an umami flavour bomb with rich shiitake mushrooms, Chinese Chinkiang black vinegar, soy and other great flavours. This sauce first appeared in the 80’s and is named after the XO cognac, evoking the luxurious liquor. There is no cognac in it, though and it isn’t really a sauce – more of a relish. That’s just splitting hairs though!
XO Sauce is a “bit on the side” condiment, great for adding to so many dishes on a side plate (or on the main plate to save washing up!). It will enrich any dish you put it with, with it’s rich savouriness that you will want o reach for again and again. Try with rice, noodles, egg dishes and stir fry. There is so much you can do with it and, as it is vegan, suits every food preference!
