Spring Water Salt is a very special salt that is the produce of just a small group of harvesters. Deep underneath Portugal, underground rivers flow through 200 million year old rock salt formations. This eventually finds its way to the surface in a spring in the north of the country. The water is diverted into pans where it evaporates of, leaving the salt behind which is harvested using traditional wooden tools. Finally, the salt dries under the sun before going through a series of tests by the government to ensure its quality. Only then is it for sale on the open market.
Spring Water Salt starts off with a soft sodium flavour before building to a stronger but short lived flavour. This is perfect as a finishing salt where you’ll get the most out of the flavour profile. Use in a grinder is possible, but not really ideal as the grains are fairly small. If you’re a fan of salt and appreciate the nuances in flavour or appreciate the unique attributes from the local harvesting conditions, this is one to consider trying!
You can use this pretty much anywhere you would use salt, but we’d recommend using it for special occasions or your favourite foods. Season your meals to perfection with just a pinch! As with all salts, add a little at a time to get the flavour you want. Adding more is easy, removing it can be difficult if not impossible.
