Madras Curry Powder is a delicious blend of spices that will bring a taste of India to your foods. It combines Coriander, Turmeric, Fenugreek, Salt, Garlic, Chilli, Cumin, Fennel, Mustard and Black Pepper into an amazingly aromatic spice mix. It’s main use is to easily recreate Madras curries with medium heat with a few store cupboard ingredients. With a tin of tomatoes, a couple of onions and some stock, you can quickly make a tasty sauce that you can use with pretty much any meat or vegetable.
Madras Curry Powder is also great as a seasoning for foods, adding a burst of fragrant flavour to almost anything. Sprinkle it over popcorn, potato wedges, eggs, soups and much more to add interest and heat. Mix some with batter or breadcrumbs when coating ingredients or stir into sauces such as mayonnaise for something different. The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
