Buffalo Wing Seasoning is a mix of herbs and spices that give an amazing flavour to chicken wings (or cauliflower wings, if you’d prefer!). It consists of Chilli Powder, Smoked Paprika, Garlic Granules, Onion Granules, Sea Salt, Turmeric, Mustard Powder, Habanero Chilli Powder, Black Pepper and Sugar. Simply dust over the wings before cooking (2-5% by weight is a good starting point). 500g of wings would take 25g of seasoning at 5% – it’s all about experimenting to find the flavour and heat level you like!
You can also add some Buffalo Wing Seasoning to tomato sauce or passata with some melted butter to make a sauce for the wings. If using passata, add some vinegar for more flavour (tomato sauce already has vinegar). Pour over the wings and baste well, cooking them further if you want to. Serve with celery sticks and blue cheese if you’re being traditional, but serve with whatever you want!
The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
