Cajun Spice Blend is a mix of herbs and spices that evoke the flavours of Louisiana, USA. The mix consists of Salt, Paprika, Fennel, Basil, Black Pepper, Garlic, Onion, Chilli, Cumin and Mustard. It makes flavouring food with a Cajun twist much easier than using all the component parts, saving you a lot of time and hassle.
Cajun Spice Blend is great as a dry rub for meats and fish, or you can make it into a marinade. It also makes oils and yogurt dressings more interesting, giving everything that deep south vibe. You can also make up some brilliant sauces and dressings with it. Maybe get really adventurous and get some Louisiana Mudbugs (or crawfish as we know them), cook them up while listening to some Zydeco music!

The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
