Amba Powder Seasoning is an Arabic blend that combines a range of great spices into an incredibly flavourful mix. It consists of Mango Powder, Aleppo Pepper, Black Pepper, Coriander, Cumin, Fenugreek, Mustard, Paprika, Turmeric and Sumac. Sharp, sour, punchy and delicious, this is a blend that many won’t have had the pleasure of trying before!

Amba Powder Seasoning makes a great marinade for meats and vegetables, adding a huge kick of tongue tingling flavour! If you’re making kebabs at home, this blend will give a nice twist on the normal. You can also use it to make sauces or just sprinkle some as it is into a sandwich (Arabic and Indian theme fillings work best!) PLEASE NOTE – This blend has no salt in it, so you can add as little or as much as you want. We recommend adding at least some to really bring out and enhance the flavours of the spices.

Recipes that use Amba Powder Seasoning

 

SWEET POTATO SOUP WITH AMBA POWDER – by Misty Marie

Ingredients

  • 2 large sweet potatoes, peeled and cut into chunks
  • 1 large brown onion, peeled and sliced thin
  • 2-3 garlic cloves, peeled and rough chopped
  • 750 – 1000 ml (approximately) chicken or vegetable stock
  • 1 tbsp (plus additional to taste) Amba Powder Seasoning
  • Salt to taste
  • Splash of neutral flavoured oil
  • 1 can coconut milk
  • 1 fresh lime
  • Fresh coriander for garnish (optional)

Method

1. Cook sliced onion in a splash of oil of choice, seasoned with salt. When nearly translucent, add garlic and cook for another 1-2 minutes.
2. Add stock, sweet potatoes, and about 1 tbsp of Amba Powder. Bring to a boil and let simmer uncovered for about 20 minutes or until potatoes are fork tender. You may need to add extra stock if too much liquid cooks down.
3. Use a hand blender to puree until smooth. You can also transfer to a regular blender and do it in batches, being very careful of steam.
4. Stir in the can of coconut milk. The soup texture should be silky.
5. At this point, you can add more broth if it needs to be thinned out or add more Amba Powder if you want it to have more of a kick. Adjust salt levels as well.
6. When serving, garnish with a squeeze of lime juice to taste and torn coriander leaves.
